Midi track volume jumps

I've been playing around with some midi tracks, and lets say the bass track jumps in volume some times or the drums start off quiet then get louder.
Another thing thats been happening is that this one song starts off quiet even thought the setting is on 127 volume and as soon as i just touch the fader the volume jumps to where it should be.
I played with the record tracks button and seem to have made it all worse.
How can i just get back to an even volume on each track?
do i have to use the record fader option?
How do i fix my midi tracks so i can just manualy ajust the volumes and then save them and they will never move unless i move them.
