I hear that laying down multi tracks of the same records and tweaking the pan left/right on different tracks help round out your sound. Does anyone do this?

Yes, I do. When I record a rhythm guitar part, I will record it twice (if possible) or double the track and adjust the pan to fill the sound out. Plus I will use different EQ for the two track just to give it some dynamics.

I do this on my vocals and I think they sound a lot better. Really full.
I record them flat and then add FX.
